Raw milk contains every known fat and water soluble vitamin in a bioavailable form. It contains every known essential mineral with the major players being calcium, magnesium, phosphorus, sodium, and sulfur. It also contains 24 vital trace minerals. All 60 known enzymes are found intact and functioning in raw milk. All 22 amino acids including 8 essential amino acids which are the building blocks of protein.
Pasteurization (heating the milk above 160F) is literally what causes changes in the whey proteins in milk and its overall nutritional composition. When you heat milk to this degree, you are inevitably going to kill beneficial enzymes, bacteria, immunoglobulins, proteins and nutrients that are very heat-sensitive.
There’s evidence that pasteurization may reduce folate concentrations and vitamins C,E,B2,B1, and B12 (PMID: 32438623, PMID: 27340300)
Researchers have also found that pasteurization destroys an enzyme called alkaline Phosphatase… and when they re-added ALP back into pasteurized milk, it rekindled the milk’s ability to reduce allergies ( PMID: 31262028).
In terms of health benefits, if you look at the research on raw milk it’s actually pretty astounding there are many studies showing that kids who grow up drinking raw milk and who live on or off of farms have lower rates of asthma eczema and allergies when they’re adults (PMID: 25441645, PMID: 21875744)
There’s also a significant amount of evidence that raw milk is beneficial in reducing respiratory tract infections in children and thus improving the immune system of children (PMID: 29483908).
